5 /5 Culinary Chronicles of Central Illinois SevenMALKIN: Signature Café is Bloomington’s hidden Mediterranean gem where customization and fresh ingredients reign supreme! Partner-owners Sal, Karthik, and Blessin have built nearly two years of buzz by letting you craft wraps, bowls, and platters your way.
From the moment Sal greeted us, personally crafting our meal and refreshing real-fruit Mango Refresher, we knew we were in for something special.
Every bite bursts with vibrant layers of flavor. Our platter set a new standard: saffron rice and super greens formed the base, while red pepper hummus and tangy feta added creamy depth. Chicken and steak shawarma arrived perfectly seasoned, roasted chickpeas brought comforting earthiness, and tzatziki drizzled with honey danced alongside turnip pickles and crisp Jerusalem salad. Three house-made dressings—fiery habanero, zesty tabbouleh, and aromatic skhug—invited us to mix and match until the plate was wiped clean.
The Persian lamb shank stole the show next: fall-off-the-bone slow-cooked lamb bathed in its own rich gravy, resting on a bed of saffron rice with house-made pickled onions and garlic sauce. Each forkful felt like a celebration of wholesome, time-honored technique.
Don’t skip the desserts: Dubai Chocolate is a pistachio-studded chocolate lover’s dream, while Biscoff Kunanta layers a crunchy cookie-like base under silky chocolate and a dusting of pistachio. Sal’s recommendation of the Chickdo milkshake—thick, creamy, with a hint of sapota—rounded out our meal on a heavenly note.
With franchise opportunities, full catering, and sister businesses Signature House construction and Signature Grocery in the same mall, Signature Café is poised to become a Midwest sensation.
